Laiterie Charlevoix was founded by grandparents Elmina Fortin and Stanislas Labbé in 1948. It is one of the few dairy farms in Quebec to use artisanal methods to make cheddar cheese, yet they comply rigorously with current processing standards. Every day, before 11 a.m., observe the artisans and learn the basics of cheese making and the aging process. While admiring equipment from another era, purchase tempting products made on the premises: wheels of cheese, cheddar cheese curds, cheese aged to perfection, habitant cream, etc. The farm is also involved in safeguarding a national treasure, the “Canadienne” breed of cow.
